The 14 EU allergens: a quick guide for your menu

Declaring allergens is not optional: Regulation (EU) 1169/2011 requires you to provide information about 14 allergens in any food you serve unpackaged. The good news: doing it properly is easier than it sounds.

The 14 on the list

Gluten, crustaceans, eggs, fish, peanuts, soy, dairy, tree nuts, celery, mustard, sesame, sulphites, lupins and molluscs.

The three most common mistakes

  1. The generic sign (“ask our staff”) with no real information behind it.
  2. The out-of-date menu: the dish changed supplier and the allergens are no longer the same.
  3. The ambiguous “seafood”: crustaceans, molluscs or both? Each one is a different allergen.
